  • ½ pound of lean, fresh pork, largely cubed
  • 6 pieces of dried scallops
  • 2 cups of long-grain rice
  • 2 L of water
  • ½ teaspoon of salt
  • Whatever toppings you want
  1. Being to boil your rice, water and dried scallops in a large pot
  2. Rinse pork in warm water and cut into large cubes, salt while waiting for congee to boil
  3. Once water boils, add in the pork
  4. Boil on high for 5 minutes, then reduce to a medium boil for another 20 minutes
  5. Serve and enjoy with your favourite toppings
