Soup Name: Zesty Tomato and Potato Soup

Traditional Chinese Name: 番茄湯 (fān qié tāng) 

Introduction:

This soup is called “zesty” because of the tangy and appetizing taste of the soup.  It is not considered an “old-fire” soup because it can be made on the fly and within an hour if you’re in a rush or just got home from work and really need that warm, broth in your belly.  It is ideal for toddlers (children over 1 due to the tomato content) and it is certainly a very hearty and delicious soup to consume any time.

What Ingredients are required?

1/2 pound of sliced pork meat
tomatoes
3 potatoes

2 large white onions

2-3 L of water
1 teaspoon of salt (to marinate the pork)

How do I prepare it?

  1. Use salt and mix into the pork slices.  Let stand for 10 minutes.
  2. Chop tomatoes and potatoes into large pieces.
  3. (Optional) Fry potatoes until edges are golden brown.
  4. Start boiling your water soup.
  5. In a separate pot, blanch the pork slices really quickly.
  6. Place all ingredients into your boiling soup water.
  7. Boil on high for 30 minutes.  
  8. Serve and enjoy!
